This is Steve Saka answering a question about calfrisas, which this is not. This is a curing barn at Oliva Tobacco in Esteli, Nicaragua. A calfrisa is more sealed for more accurate temperature control and quite a bit more expensive to construct making them somewhat rare.

Next he goes on to explain what this difference is between curing, which is what is happening here, and fermentation.
